Turkey Chilli

Delicious turkey chilli

I love a warm bowl of chilli on a cool fall day. Or enjoying a thermos full of chilli after a few hours on the slopes. Between the beans and the barley this chilli is packed full of fibre. It’s a wonderful change from the typical beef version.

You will need:

  • 1 large onion, chopped
  • 1 Tbsp olive oil
  • 1 pound lean ground turkey
  • 1/4 cup chilli powder
  • 1 tsp dried oregano
  • 1 tsp dried cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cinnamon
  • 14oz chicken broth (more if necessary)
  • 28oz can of diced tomatoes
  • 3-19oz cans of navy beans
  • 1/2 cup pot barley

In a medium to large saucepan, over medium-high heat, soften onions in olive oil (about 3-5 minutes) then add meat and cook until no pink remains.

Add spices and cook for 1 minute.

Add everything else and simmer for 60-90 minutes.
